Lemon Cookies

Iced Lemon Cookies

½ cup butter
½ cup sugar
½ cup powdered sugar
1 egg
½ cup vegetable oil
1 tsp grated lemon peel
2 ¼ cups flour
½ tsp baking soda
½ tsp cream of tartar
¼ tsp salt

Icing

2 cups powdered sugar
2 ½-3 Tbl lemon juice

In large bowl, cream butter and sugars, till light and fluffy. Beat in egg, oil, and lemon peel. Add dry ingredients till well blended. Shape dough into 1 in balls. Place on cookie sheets. Dip bottom of a damp glass in sugar and flatten each cookie, redipping between cookies. Bake at 325 for 8-10 mins. Cool 2 mins. Remove from cookie sheets. Cool completely. Mix icing ingredients till smooth. Ice cookies.

I also liked them without the icing, the sugar on top gives it enough sweetness. They are really light in color like a sugar cookie, and don't get very golden, so don't overbake, they aren't as good crunchy.
