Fish Tacos

Here's another recipe to use up that fish, Rachel :)

4-6 oz tilapia filets (or other white fish)
1 Tbsp Olive oil
2 Tbsp Lime juice
1 garlic clove, minced
1/4 tsp salt
pinch of pepper
pinch of cayenne (if desired)

2 T sour cream
2 T mayonnaise
1 T lime juice
salt and pepper to taste

Thinly shredded lettuce or cabbage
8 small tortillas (corn or flour), warmed
Cilantro, if desired

Mix together oil, lime juice, garlic, salt and peppers and place in a plastic bag or sealed container with the fillets. Marinate ~30 minutes. Mix together sour cream, mayo, lime juice, salt and pepper and set aside.

Heat 1 Tbsp oil in a skillet over medium heat. Cook marinated fish for 4-6 minutes per side or until opaque and flakes easily with a fork. Serve on warmed tortillas topped with sour cream sauce, shredded cabbage and cilantro. Goes great with black beans, avocados and lime wedges on the side.

  1. Made them tonight...so Good! Felt like we were eating Rubio's again, only better. We also had cilantro lime rice on the side, the knock-off Cafe Rio recipe.
